  • 23 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup mixed bell peppers (red and green), sliced
  • 1 medium sweet onion, thinly sliced
  • 3 cloves fresh garlic, minced
  • 4 large flour tortillas
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Sour cream or salsa for serving (optional)

Instructions

  1. Slice chicken breasts into bite-sized pieces and combine them with sliced bell peppers, onions, minced garlic, cumin, and chili powder in a bowl.
  2. Heat olive oil in a skillet over medium-high heat. Add the chicken mixture and cook for about 8-10 minutes until the chicken is golden brown and cooked through.
  3. Remove the cooked mixture and set aside. In the same skillet, place one tortilla down, sprinkle half with cheese, add half of the chicken mixture, then fold over.
  4. Cook each quesadilla on medium heat for about 3-4 minutes per side until golden brown and crispy.
  5. Slice into wedges and serve hot with sour cream or salsa.
