  • 1 lb lean ground beef
  • 2 medium Yukon Gold potatoes, diced
  • 2 medium carrots, chopped
  • 1 medium sweet onion, chopped
  • 4 cups low-sodium beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup whole milk or heavy cream
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add chopped onions and carrots to the skillet and sauté until onions are translucent.
  3. Transfer the beef mixture to your crockpot. Add diced potatoes, beef broth, garlic powder, salt, and pepper. Stir well.
  4. Cook on low for 6-8 hours.
