  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 3 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 yellow onion, diced
  • 2 cups egg noodles
  • 6 cups low-sodium chicken broth
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Chop carrots, celery, onion, and garlic into bite-sized pieces.
  2. Place chicken breasts in the bottom of the crockpot. Layer with veggies, thyme, salt, and pepper.
  3. Pour chicken broth over the ingredients until just covered.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in egg noodles.
  6. Shred the chicken inside the pot using two forks before serving.
