  • 28 oz canned fire-roasted diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 4 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 2 tsp Italian seasoning
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Sauté the onion in olive oil over medium heat until golden brown. Add minced garlic and cook until fragrant.
  2. Transfer sautéed onions and garlic to a crockpot. Stir in diced tomatoes and vegetable broth.
  3. Add frozen tortellini and Italian seasoning; mix well.
  4. Cook on low for 4 hours or high for 2 hours.
  5. About 30 minutes before serving, stir in heavy cream and fresh spinach until wilted.
