  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 cup bell peppers, chopped
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup shredded chicken or 1 can (15 oz) beans, drained and rinsed
  • 2 tsp fresh thyme
  • 2 bay leaves
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 3 cloves garlic, minced

Instructions

  1. Prep your ingredients by washing and chopping all vegetables into bite-sized pieces.
  2. Optional: In a skillet over medium heat, sauté minced garlic until fragrant (about 30 seconds) before adding it to the crockpot.
  3. Layer chopped vegetables in the bottom of the crockpot followed by your choice of protein.
  4. Pour in broth until everything is submerged but not drowning.
  5. Season with thyme, bay leaves, salt, and pepper; stir gently to combine.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Taste and adjust seasoning before serving.
