Instructions

  1. Preheat the oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
  2. Boil the chopped Yukon Gold potatoes in salted water until fork-tender (15-20 minutes), then drain.
  3. Return potatoes to the pot, squeeze in roasted garlic cloves, add butter, and mash until smooth.
  4. Gradually mix in heavy cream to reach your desired consistency. Season with salt and pepper.
