Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Mince garlic, chop sun-dried tomatoes, and rinse spinach.
  2. Sear the salmon: Heat olive oil in a large skillet over medium heat. Season salmon with salt and pepper. Cook skin-side down for 4-5 minutes until golden brown, then flip and cook until done.
  3. Make the sauce: Remove salmon; add garlic to the skillet and sauté until fragrant. Stir in sun-dried tomatoes, then pour in heavy cream and simmer.
  4. Add spinach: Once the cream thickens, mix in spinach until wilted.
  5. Finish the dish: Stir in Parmesan cheese and lemon juice, then return salmon to skillet and coat with sauce. Heat through for about 2 minutes before serving.
