- 1 cup heavy cream
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Prepare ingredients: Mince garlic, chop sun-dried tomatoes, and rinse spinach.
- Sear the salmon: Heat olive oil in a large skillet over medium heat. Season salmon with salt and pepper. Cook skin-side down for 4-5 minutes until golden brown, then flip and cook until done.
- Make the sauce: Remove salmon; add garlic to the skillet and sauté until fragrant. Stir in sun-dried tomatoes, then pour in heavy cream and simmer.
- Add spinach: Once the cream thickens, mix in spinach until wilted.
- Finish the dish: Stir in Parmesan cheese and lemon juice, then return salmon to skillet and coat with sauce. Heat through for about 2 minutes before serving.
