  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup whole wheat breadcrumbs
  • 1 large egg
  • 1 cup full-fat Greek yogurt
  • 1/2 cucumber, grated
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Rinse the lentils under cold water, then cook in a pot with three cups of water over medium heat for about 25 minutes until tender.
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion for about five minutes until translucent.
  3. In a mixing bowl, combine cooked lentils, sautéed onions, minced garlic, parsley, breadcrumbs, egg, salt, and pepper. Mix gently.
  4. Preheat the oven to 400°F (200°C). Shape the mixture into small balls (about two tablespoons each) and place them on a parchment-lined baking sheet.
  5. Bake for 25-30 minutes or until golden brown. Flip halfway through for even cooking.
  6. For the tzatziki sauce, mix Greek yogurt with grated cucumber, lemon juice, salt, and pepper in a bowl; chill before serving.
