Ingredients

  • 1 lb fresh salmon fillet, skinless
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tsp sriracha (adjust to taste)
  • Juice of 1 lemon
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the salmon fillet under cold water and pat dry. Cut into bite-sized cubes.
  2. In a bowl, combine mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust spice level if desired.
  3. Dip each salmon cube into the mayonnaise mixture, then roll in panko breadcrumbs until fully coated.
  4. Heat oil in a skillet over medium heat until shimmering. Fry salmon bites for about 3-4 minutes per side or until golden brown.
  5. Transfer cooked bites to a paper towel-lined plate to drain excess oil. Drizzle with additional bang bang sauce and sprinkle with green onions before serving.
