- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tsp sriracha (adjust to taste)
- Juice of 1 lemon
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Rinse the salmon fillet under cold water and pat dry. Cut into bite-sized cubes.
- In a bowl, combine mayonnaise, sweet chili sauce, and sriracha until smooth. Adjust spice level if desired.
- Dip each salmon cube into the mayonnaise mixture, then roll in panko breadcrumbs until fully coated.
- Heat oil in a skillet over medium heat until shimmering. Fry salmon bites for about 3-4 minutes per side or until golden brown.
- Transfer cooked bites to a paper towel-lined plate to drain excess oil. Drizzle with additional bang bang sauce and sprinkle with green onions before serving.
