  • 1 lb fresh salmon fillets, cut into 1-inch cubes
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • 1/4 cup mayonnaise
  • 2 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 2 green onions, chopped
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare three bowls: one with seasoned flour, one with beaten eggs, and one with panko mixed with lemon zest.
  3. Dip each salmon cube into the flour, then the egg, and finally coat with panko.
  4. Arrange on a parchment-lined baking sheet, allowing space between bites.
  5. Bake for 15-20 minutes until golden brown and crispy.
  6. For the bang bang sauce, mix mayonnaise, sriracha, honey, and lime juice until smooth; adjust spice as desired.
  7. Serve hot with sauce drizzled on top and garnished with green onions alongside lemon wedges.
