  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine oil, buttermilk, eggs, food coloring, and vanilla extract until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined—do not overmix.
  5. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. For the frosting, beat softened cream cheese and butter until creamy. Gradually add sifted powdered sugar until desired sweetness is reached.
  7. Once cupcakes are completely cooled, frost generously with the cream cheese frosting.
