  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs (room temperature)
  • 1 cup pitted dates, chopped
  • 1 tsp baking powder
  • ½ cup heavy cream
  • ¾ cup brown sugar (light or dark)
  • 2 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well.
  3. Sift together flour and baking powder; fold into the butter mixture. Stir in chopped dates.
  4. Pour batter into the prepared pan and smooth the top. Bake for 30-35 minutes or until a toothpick comes out clean.
  5. For the toffee sauce, heat heavy cream and brown sugar in a saucepan over medium heat until thickened.
  6. Once the cake has cooled slightly, poke holes in the top and pour half of the toffee sauce over it.
  7. Serve warm with additional sauce and whipped cream or ice cream.
