Ingredients

Scale
  • 4 medium sweet potatoes (about 2 lbs), peeled and thinly sliced
  • 1 cup heavy cream
  • 3/4 cup dark brown sugar
  • 1/4 cup unsalted butter, melted
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh herbs (optional): thyme or rosemary

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with butter or non-stick spray.
  2. Peel and slice the sweet potatoes into 1/8 inch rounds for even cooking.
  3. In a bowl, whisk together heavy cream, brown sugar, salt, and pepper until well combined.
  4. Layer half of the sweet potato slices in the baking dish. Pour half of the creamy mixture over them. Repeat with remaining potatoes and cream.
  5. Cover the dish with foil and bake for about 45 minutes. Remove the foil during the last 15 minutes to achieve a golden crust.
  6. Let it cool slightly before serving.
