Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 ripe avocados
  • 2 tbsp fresh lime juice
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt or mayonnaise
  • 1 cup diced tomatoes (optional)

Instructions

  1. Cook the chicken by boiling or grilling for 15-20 minutes until fully cooked. Let it cool, then shred.
  2. In a bowl, scoop and mash the avocados until creamy but still chunky.
  3. Mix in lime juice, red onion, cilantro, salt, pepper, Greek yogurt or mayonnaise, and tomatoes (if using).
  4. Gently fold in the shredded chicken to maintain avocado chunks.
