- 2 cups butternut squash (cubed)
- 1 cup quinoa (rinsed)
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
- Fresh parsley or cilantro (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Chop the butternut squash into 1-inch cubes.
- Toss the cubed squash in a bowl with olive oil, garlic powder, cumin, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender.
- Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water or broth. Bring to a boil, then reduce to low and simmer for about 15 minutes until liquid is absorbed.
- Fluff the cooked quinoa with a fork, add the roasted squash, and gently mix.
- Top with chopped parsley or cilantro before serving.
