Description

Creamy Roasted Beet Salad is a vibrant dish featuring sweet roasted beets tossed in a tangy yogurt dressing. This colorful salad is perfect for any occasion and easy to whip up.


Ingredients

  • 4 medium-sized beets
  • 1 cup plain Greek yogurt
  • Juice of 1 lemon
  • 2 tablespoons extra-virgin olive oil
  • Fresh herbs (dill or parsley), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and wrap each beet in aluminum foil.
  2. Roast the wrapped beets for 45-60 minutes until fork-tender. Allow them to cool slightly, then unwrap.
  3. In a bowl, mix Greek yogurt, lemon juice, salt, and pepper until smooth.
  4. Peel the cooled beets and chop into bite-sized cubes.
  5. In a mixing bowl, combine the chopped beets with fresh herbs and drizzle with the yogurt dressing, tossing gently to coat.
  6. Serve immediately or chill for 30 minutes before serving.
