- 1 cup plain Greek yogurt

Instructions
- Preheat the oven to 400°F (200°C). Wash and wrap each beet in aluminum foil.
- Roast the wrapped beets for 45-60 minutes until fork-tender. Allow them to cool slightly, then unwrap.
- In a bowl, mix Greek yogurt, lemon juice, salt, and pepper until smooth.
- Peel the cooled beets and chop into bite-sized cubes.
- In a mixing bowl, combine the chopped beets with fresh herbs and drizzle with the yogurt dressing, tossing gently to coat.
- Serve immediately or chill for 30 minutes before serving.
