Ingredients

  • 3 ripe bananas
  • 1 large egg
  • 1 cup sugar (½ cup granulated + ½ cup brown sugar)
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Mix in the egg, both sugars, and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet mixture until just combined.
  5. If desired, fold in chocolate chips.
  6. Scoop rounded balls onto the prepared baking sheet about two inches apart.
  7. Bake for 10-12 minutes until golden brown around the edges.
  8. Allow to cool on the sheet for a few minutes before transferring to wire racks.
