- 3 ripe bananas
- 1 large egg
- 1 cup sugar (½ cup granulated + ½ cup brown sugar)
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Mix in the egg, both sugars, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet mixture until just combined.
- If desired, fold in chocolate chips.
- Scoop rounded balls onto the prepared baking sheet about two inches apart.
- Bake for 10-12 minutes until golden brown around the edges.
- Allow to cool on the sheet for a few minutes before transferring to wire racks.
