Description

Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tbsp extra virgin olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 tsp dried oregano
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 cup orzo pasta
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Gather and chop all ingredients.
  2. Heat olive oil in a large pot over medium heat. Sauté onions until translucent (5-7 minutes).
  3. Add beef chunks in batches, browning them on all sides (8-10 minutes).
  4. Stir in minced garlic and tomato paste; cook until fragrant (about 1 minute).
  5. Add diced tomatoes, oregano, cinnamon stick, bay leaves, salt, and pepper.
  6. Pour in enough water to cover everything. Bring to a gentle boil, then reduce heat to low and simmer for 1-1.5 hours.
  7. Once beef is tender, stir in orzo pasta and additional liquid if needed; cook uncovered until pasta is al dente (10-12 minutes).
  8. Serve hot with freshly chopped parsley on top.
