  • 1 cup instant couscous
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 cup bell peppers (red and yellow), diced
  • 1/2 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the couscous according to package instructions; typically bring water to a boil, add couscous and a pinch of salt, cover, and remove from heat after two minutes.
  2. While the couscous steams, chop cherry tomatoes, cucumber, and bell peppers into bite-sized pieces.
  3. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  4. Fluff the cooked couscous with a fork in a large bowl. Add chopped vegetables, crumbled feta cheese, parsley, and mint. Drizzle with dressing and toss gently.
