Ingredients

  • 4 (6 oz) salmon fillets
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • Juice of 1 lemon
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat dry the salmon fillets and place them on a baking sheet lined with parchment paper.
  3. In a small bowl, combine cumin, coriander, paprika, garlic powder, lemon zest, salt, and pepper. Mix well.
  4. Rub olive oil over the salmon fillets and generously apply the spice mix.
  5. Bake for 12-15 minutes until the salmon flakes easily with a fork.
  6. While baking, mix Greek yogurt, lemon juice, salt, and chopped herbs until smooth.
  7. Serve hot with dollops of lemon yogurt sauce.
