Description

Ingredients

  • Fettuccine or penne pasta
  • Red and yellow bell peppers
  • Zucchini
  • Cherry tomatoes
  • Fresh garlic
  • Extra virgin olive oil
  • Freshly grated Parmesan cheese
  • Fresh basil

Instructions

  1. 1. Cook the Pasta: Boil salted water in a large pot. Add pasta and cook until al dente according to package instructions. Drain and set aside.
  2. 2. Sauté Vegetables: In a skillet over medium heat, warm olive oil and add minced garlic. Sauté until fragrant (about 30 seconds). Add bell peppers and zucchini; cook until slightly softened.
  3. 3. Add Cherry Tomatoes: Stir in halved cherry tomatoes and cook until they soften and release juices (about 2 minutes).
  4. 4. Toss Everything Together: Combine cooked pasta with sautéed veggies in the skillet. Drizzle more olive oil if necessary, season with salt and pepper, and mix well.
  5. 5. Add Cheese & Basil: Off heat, sprinkle freshly grated Parmesan cheese and chopped basil over the dish before serving.
