Instructions

  1. Preheat your oven to 350°F (175°C). Trim excess fat from the lamb for balanced flavor.
  2. In a bowl, mix olive oil, minced garlic, lemon juice, chopped rosemary, salt, and pepper to create a marinade.
  3. Generously rub the marinade over the leg of lamb and let it sit at room temperature for 30 minutes.
  4. Place carrots and potatoes around the lamb in a roasting pan; drizzle with olive oil and sprinkle with salt.
  5. Roast in the oven for about 1 hour 45 minutes or until the internal temperature reaches 145°F (medium-rare).
