  • 1 cup corn (fresh or thawed frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced (add before serving)
  • 4 cups romaine lettuce or mixed greens, chopped
  • ½ cup Southwest dressing
  • Juice of 2 limes
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. 1. Prepare the chicken: Grill or pan-sear seasoned chicken breasts over medium heat until they reach an internal temperature of 165°F (75°C), about 6-8 minutes per side.
  2. 2. Make the dressing: In a bowl, whisk together lime juice, chili powder, cumin, salt, and pepper until smooth.
  3. 3. Chop veggies: Dice the bell peppers and halve the cherry tomatoes. Rinse black beans and corn.
  4. 4. Layer the jars: Start with lettuce at the bottom followed by chicken cubes, black beans, corn, bell peppers, tomatoes, and top with avocado.
