  • 8 oz spaghetti
  • 3 cloves fresh garlic, minced
  • 5 oz fresh spinach
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 cup freshly grated Parmesan cheese
  • Salt to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until golden brown, stirring frequently.
  3. Once the garlic is fragrant, add fresh spinach to the skillet. Stir until the spinach wilts down, approximately 2-3 minutes.
  4. Drain the cooked spaghetti but reserve half a cup of pasta water. Add the spaghetti to the skillet with the garlic and spinach.
  5. Gradually pour in reserved pasta water while tossing everything together. Sprinkle red pepper flakes for an extra kick.
  6. Serve topped generously with freshly grated Parmesan cheese.
