Instructions
- Preheat a non-stick skillet over medium heat.
- Sauté minced garlic in olive oil until fragrant, then add the spinach and cook until wilted (about 3 minutes).
- On one half of each tortilla, layer sautéed spinach and crumbled feta, then fold the tortilla over.
- Cook each quesadilla in the skillet for about 3 minutes on each side until golden brown.
