Description

Spinach and Feta Quesadillas are a delightful fusion of flavors that cater to both health-conscious eaters and those seeking comfort food.


Ingredients

  • 4 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 4 large flour tortillas (or whole wheat)
  • 1 tablespoon olive oil
  • 12 cloves minced garlic

Instructions

  1. Preheat a non-stick skillet over medium heat.
  2. Sauté minced garlic in olive oil until fragrant, then add the spinach and cook until wilted (about 3 minutes).
  3. On one half of each tortilla, layer sautéed spinach and crumbled feta, then fold the tortilla over.
  4. Cook each quesadilla in the skillet for about 3 minutes on each side until golden brown.
  5. Let cool slightly before slicing into wedges and serving with your favorite dip.
