  • 1/2 cup diced bell peppers (red and green)
  • 1/4 cup diced onion
  • 1/2 cup diced cooked ham (or bacon)
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tbsp unsalted butter or olive oil

Instructions

  1. Prepare your ingredients by chopping the bell peppers and onion.
  2. In a skillet over medium heat, melt the butter. Add the bell peppers and onions; sauté until soft, about 3-4 minutes.
  3. Stir in the diced ham, adding salt and pepper to taste. Cook until heated through.
  4. In a bowl, whisk together the eggs until fully blended.
  5. Pour the eggs over the sautéed mixture in the skillet. Let cook undisturbed until edges firm up, about 3 minutes.
  6. Sprinkle cheese on top, then carefully fold one side of the omelette over using a spatula.
  7. Serve hot with toast or fresh fruit.
