- 1/4 cup diced onion
- 1/2 cup diced cooked ham (or bacon)
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tbsp unsalted butter or olive oil
Instructions
- Prepare your ingredients by chopping the bell peppers and onion.
- In a skillet over medium heat, melt the butter. Add the bell peppers and onions; sauté until soft, about 3-4 minutes.
- Stir in the diced ham, adding salt and pepper to taste. Cook until heated through.
- In a bowl, whisk together the eggs until fully blended.
- Pour the eggs over the sautéed mixture in the skillet. Let cook undisturbed until edges firm up, about 3 minutes.
- Sprinkle cheese on top, then carefully fold one side of the omelette over using a spatula.
- Serve hot with toast or fresh fruit.
