Instructions

  4. Beat in eggs one at a time until well combined.
  5. Mix coconut milk, lime juice, vanilla extract, and lime zest in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture while stirring gently to avoid overmixing.
  7. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  8. Allow cupcakes to cool completely before frosting them with a mixture of powdered sugar and lime juice.
