  • 1 lb large, deveined shrimp
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside, reserving some pasta water.
  2. In a skillet over medium heat, melt butter and olive oil. Add garlic and red pepper flakes; sauté until fragrant (about 1 minute).
  3. Add shrimp to the skillet; cook until pink and opaque (3-4 minutes per side). Season with salt and pepper.
  4. Stir in lemon juice and zest, mixing well for about 30 seconds.
  5. Toss cooked pasta into the skillet, adding reserved pasta water if needed to loosen sauce, then mix until evenly coated.
  6. Remove from heat, stir in parsley, and serve immediately.
