Ingredients

Scale
  • 1 cup sweet rice flour (Mochiko)
  • 2 tablespoons matcha powder
  • 1/4 cup granulated sugar
  • 3/4 cup water
  • 2 cups ice cream (flavors of your choice)

Instructions

  1. Prepare the Ice Cream: Scoop small balls of ice cream onto a parchment-lined tray and freeze for at least 1 hour until firm.
  2. Make the Mochi Mixture: In a microwave-safe bowl, mix sweet rice flour, matcha powder, and sugar. Gradually add water and stir until smooth.
  3. Microwave: Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir, then microwave for another minute until thick and slightly translucent.
  4. Shape the Mochi: Dust a surface with cornstarch, transfer the hot mochi mixture, and roll it out to about 1/4 inch thick.
  5. Wrap Ice Cream Balls: Use cookie cutters to cut out circles from the mochi, quickly wrap each around an ice cream ball, sealing edges carefully.
  6. Final Freeze: Place wrapped balls back on the tray and freeze for at least 30 minutes before serving.
