Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add the cubed butter and mix until crumbly.
  3. Press two-thirds of the mixture into the prepared pan to form the crust. Bake for 10 minutes until lightly golden.
  4. While the crust bakes, whip the heavy cream with vanilla extract until soft peaks form.
  5. Once the crust has cooled slightly, layer the sliced strawberries on top, add dollops of whipped cream, and sprinkle with remaining crumb mixture.
  6. Return to the oven and bake for an additional 15-20 minutes until golden brown. Allow to cool completely before slicing into squares.
