Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
- Add egg yolk and vanilla extract; mix until smooth.
- Gradually incorporate flour and salt until just combined; avoid overmixing.
- Scoop out tablespoon-sized balls of dough and place them on prepared baking sheets, spaced about 2 inches apart.
- Using your thumb or the back of a spoon, create an indentation in the center of each ball.
- Spoon about half a teaspoon of jam into each thumbprint.
- Bake for 12-15 minutes or until edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
