  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar (light)
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup of your favorite jam or preserve (raspberry or apricot recommended)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  3. Add egg yolk and vanilla extract; mix until smooth.
  4. Gradually incorporate flour and salt until just combined; avoid overmixing.
  5. Scoop out tablespoon-sized balls of dough and place them on prepared baking sheets, spaced about 2 inches apart.
  6. Using your thumb or the back of a spoon, create an indentation in the center of each ball.
  7. Spoon about half a teaspoon of jam into each thumbprint.
  8. Bake for 12-15 minutes or until edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
