Description

Mexican Corn Coleslaw is a vibrant, zesty salad combining sweet corn and crunchy cabbage, making it the ideal side for summer gatherings.


Ingredients

  • 2 cups fresh corn (about 3 ears)
  • 4 cups shredded green and purple cabbage
  • 1/2 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Shuck the corn and chop the cabbage and onion.
  2. In a large bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  3. Combine corn, cabbage, red onion, and cilantro in the bowl with the dressing. Gently toss to mix.
  4. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
  5. Serve chilled in a bowl and enjoy!
