Ingredients

  • 4 chicken legs (drumsticks)
  • 1 cup long grain rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Coat the chicken legs with olive oil, then season with garlic powder, onion powder, paprika, salt, and pepper.
  3. Place seasoned chicken legs in a large baking dish.
  4. In a bowl, mix rice with chicken broth, adding salt and pepper. Pour around the chicken in the dish.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove foil and bake for an additional 15 minutes until chicken is golden brown.
  7. Let rest for 5 minutes before serving.
