Ingredients

  • 1 cup bell peppers (diced, mixed colors)
  • 1 cup fresh spinach (chopped)
  • 1/2 cup cheese (feta or cheddar, shredded)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously spray a muffin tin with non-stick cooking spray.
  3. In a bowl, whisk the eggs until frothy.
  4. Fold in diced bell peppers, chopped spinach, cheese, salt, and pepper.
  5. Pour the mixture into each muffin cup until three-quarters full.
  6. Bake for 20-25 minutes until golden brown and puffed.
  7. Let cool slightly before removing from the tin.
