- 9 no-boil lasagna noodles
- 1 lb spicy ground sausage
- 8 oz cream cheese (softened)
- 2 cups shredded sharp cheddar cheese
- 1 cup grated Parmesan cheese
- 2 tbsp Cajun seasoning
- 1 cup diced bell peppers
- 1 medium onion (diced)
- 3 garlic cloves (minced)
- 28 oz canned diced tomatoes (fire-roasted if desired)
- 2 tbsp olive oil
- Fresh parsley (for garnish, optional)
Instructions
- Preheat oven to 375°F (190°C). In a large skillet over medium heat, heat olive oil. Sauté onions and bell peppers until softened, about 5 minutes.
- Add ground sausage and cook until browned, about 8 minutes. Stir in minced garlic and Cajun seasoning for an additional minute.
- Stir in diced tomatoes and simmer for about 5 minutes.
- In a bowl, combine softened cream cheese with half the cheddar and Parmesan until smooth.
- In a greased baking dish, layer sauce, noodles, cheese mixture, and repeat until all ingredients are used. Top with remaining cheeses.
- Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden.
- Let cool slightly before slicing; garnish with parsley if desired.
