Description

Experience a flavorful blend of spicy sausage, creamy cheese, and vibrant veggies in this easy Cajun lasagna that will impress at any gathering.


Ingredients

  • 9 no-boil lasagna noodles
  • 1 lb spicy ground sausage
  • 8 oz cream cheese (softened)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 2 tbsp Cajun seasoning
  • 1 cup diced bell peppers
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 28 oz canned diced tomatoes (fire-roasted if desired)
  • 2 tbsp olive oil
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat oven to 375°F (190°C). In a large skillet over medium heat, heat olive oil. Sauté onions and bell peppers until softened, about 5 minutes.
  2. Add ground sausage and cook until browned, about 8 minutes. Stir in minced garlic and Cajun seasoning for an additional minute.
  3. Stir in diced tomatoes and simmer for about 5 minutes.
  4. In a bowl, combine softened cream cheese with half the cheddar and Parmesan until smooth.
  5. In a greased baking dish, layer sauce, noodles, cheese mixture, and repeat until all ingredients are used. Top with remaining cheeses.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden.
  7. Let cool slightly before slicing; garnish with parsley if desired.
