- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder

- 1 can black beans, drained and rinsed (15 oz)
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1 cup corn (fresh or canned)
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- ½ cup chopped fresh cilantro
- Juice of 1 lime
Instructions
- Season chicken breasts with chili powder, cumin, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat.
- Sear chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
- In the same skillet, sauté diced bell peppers and corn until softened.
