Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup rice (brown or white)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup corn (fresh or canned)
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • ½ cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Season chicken breasts with chili powder, cumin, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat.
  2. Sear chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  3. In the same skillet, sauté diced bell peppers and corn until softened.
  4. Cook rice according to package instructions while prepping tomatoes and cilantro.
  5. In bowls, layer rice, sliced chicken, black beans, sautéed vegetables, and shredded cheese.
  6. Drizzle lime juice over each bowl and top with fresh cilantro before serving.
