- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fusilli or penne pasta
- 4 cups romaine lettuce, chopped
- 1 cup Caesar dressing
- ½ cup freshly grated Parmesan cheese
- 1 cup croutons
- Salt and pepper to taste
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- ½ tsp garlic powder
Instructions
- Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat for about 6–7 minutes per side until golden brown and cooked through. Let rest before slicing.
- Cook pasta in boiling salted water according to package instructions until al dente. Drain and rinse under cold water.
- Chop romaine lettuce and grate Parmesan cheese while the chicken rests.
- In a large bowl, combine pasta, chopped lettuce, diced chicken, croutons, and Parmesan cheese. Drizzle with Caesar dressing.
- Toss gently until well combined. Serve immediately or chill for about 30 minutes.
