Ingredients

  • 1 lb lean ground beef
  • 4 medium russet potatoes, diced
  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ cup sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, draining excess fat.
  3. Add chopped onions and minced garlic; sauté until onions are translucent.
  4. Stir in diced potatoes, dried herbs, salt, pepper, and beef broth until well combined.
  5. Transfer the mixture to a greased baking dish and top with shredded cheddar cheese.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
