Instructions
- Peel and dice the sweet potatoes into bite-sized cubes. Chop the onion and bell pepper, and mince the garlic.
- Heat olive oil in a large skillet over medium heat. Add the onion and sauté until translucent (about 3 minutes).
- Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned (approximately 5 minutes).
- Stir in the sweet potatoes, bell pepper, and garlic. Sauté until the sweet potatoes soften slightly (about 8 minutes).
- Season with paprika, cumin, salt, and pepper. Mix well and cook for an additional 5 minutes until everything is tender but not mushy.
