- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 4 cloves fresh garlic, minced
- 1 teaspoon dried oregano
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon olive oil
Instructions
- Select the sauté function on your Instant Pot. Add olive oil and minced garlic; sauté until fragrant (about 1 minute).
- Season the chicken breasts with salt, pepper, and oregano. Place them in the pot over the sautéed garlic.
- Layer rinsed long-grain rice evenly over the chicken without stirring.
- Carefully add chicken broth and soy sauce to the pot without disturbing the layers.
- Seal the lid and set the Instant Pot to cook on high pressure for 10 minutes. Allow natural pressure release for 10 minutes before manually releasing any remaining steam.
- Open the lid and fluff rice gently with a fork before serving.
