Instant Pot Chicken and Rice is a comforting and effortless one-pot meal that’s perfect for busy weeknights or cozy family dinners.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 4 cloves fresh garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon olive oil

Instructions

  1. Select the sauté function on your Instant Pot. Add olive oil and minced garlic; sauté until fragrant (about 1 minute).
  2. Season the chicken breasts with salt, pepper, and oregano. Place them in the pot over the sautéed garlic.
  3. Layer rinsed long-grain rice evenly over the chicken without stirring.
  4. Carefully add chicken broth and soy sauce to the pot without disturbing the layers.
  5. Seal the lid and set the Instant Pot to cook on high pressure for 10 minutes. Allow natural pressure release for 10 minutes before manually releasing any remaining steam.
  6. Open the lid and fluff rice gently with a fork before serving.
