- 4 cups powdered sugar
- 1 cup unsweetened coconut flakes
- 1 cup semi-sweet chocolate chips
- 1 tsp vanilla extract
Instructions
- Clear your kitchen counter and gather all ingredients.
- If using fresh potatoes, boil until tender and mash until smooth. If using leftovers, ensure they are cool.
- In a mixing bowl, combine the mashed potatoes, powdered sugar, coconut flakes, and vanilla extract. Mix well.
- Shape the mixture into small oval 'potato' shapes (about 20 pieces).
- Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time until smooth.
- Dip each 'potato' into melted chocolate, letting excess drip off before placing on parchment paper. Optionally sprinkle cocoa powder or crushed nuts while still wet.
- Allow to cool completely before serving or store in an airtight container in the fridge.
