Ingredients

  • 4 cups powdered sugar
  • 1 cup unsweetened coconut flakes
  • 1 cup semi-sweet chocolate chips
  • 1 tsp vanilla extract

Instructions

  1. Clear your kitchen counter and gather all ingredients.
  2. If using fresh potatoes, boil until tender and mash until smooth. If using leftovers, ensure they are cool.
  3. In a mixing bowl, combine the mashed potatoes, powdered sugar, coconut flakes, and vanilla extract. Mix well.
  4. Shape the mixture into small oval 'potato' shapes (about 20 pieces).
  5. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time until smooth.
  6. Dip each 'potato' into melted chocolate, letting excess drip off before placing on parchment paper. Optionally sprinkle cocoa powder or crushed nuts while still wet.
  7. Allow to cool completely before serving or store in an airtight container in the fridge.
