Description

Mushroom and Spinach Lasagna is a delightful vegetarian dish that layers creamy ricotta, gooey mozzarella, and earthy mushrooms with fresh spinach, all enveloped in rich marinara sauce. This comforting meal is perfect for weeknight dinners or gatherings with friends and family.


Ingredients

  • Lasagna noodles (traditional or no-boil)
  • Fresh mushrooms (button or cremini)
  • Fresh baby spinach
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Minced garlic
  • Olive oil
  • Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté sliced mushrooms and minced garlic until tender.
  3. Add spinach to the skillet; cook until wilted. Season with salt, pepper, and Italian seasoning.
  4. In a bowl, mix ricotta cheese with half of the grated Parmesan.
  5. Layer ingredients in the baking dish: marinara sauce, noodles, ricotta mixture, sautéed vegetables, mozzarella cheese. Repeat layers and finish with remaining mozzarella and Parmesan on top.
  6. Cover with foil and bake for 25 minutes; uncover for an additional 10 minutes until bubbly.
