Ingredients
- Lasagna noodles (traditional or no-boil)
- Fresh mushrooms (button or cremini)
- Fresh baby spinach
- Ricotta cheese
- Shredded mozzarella cheese
- Grated Parmesan cheese
- Minced garlic
- Olive oil
- Italian seasoning
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet, heat olive oil over medium heat. Sauté sliced mushrooms and minced garlic until tender.
- Add spinach to the skillet; cook until wilted. Season with salt, pepper, and Italian seasoning.
- In a bowl, mix ricotta cheese with half of the grated Parmesan.
- Layer ingredients in the baking dish: marinara sauce, noodles, ricotta mixture, sautéed vegetables, mozzarella cheese. Repeat layers and finish with remaining mozzarella and Parmesan on top.
- Cover with foil and bake for 25 minutes; uncover for an additional 10 minutes until bubbly.
