Ingredients

  • 1 cup almond flour
  • 1 cup powdered sugar
  • 2 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp peppermint extract
  • 1/2 cup cream cheese or buttercream frosting (for filling)
  • Red and green gel food coloring

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Whisk together almond flour and powdered sugar in a bowl until combined.
  3. In a separate bowl, whip egg whites until frothy. Gradually add granulated sugar until stiff peaks form.
  4. Gently fold dry ingredients into the meringue using a spatula, adding food coloring for desired shades.
  5. Pipe small circles onto prepared baking sheets, leaving space between each macaron.
  6. Bake for 15-20 minutes until firm; allow to cool completely.
  7. Pipe filling onto half of the shells and sandwich with remaining shells.
