  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup sweet chili sauce
  • 1 cup assorted bell peppers (red, yellow, green), sliced
  • 1 cup snow peas
  • 1/2 cup unsweetened coconut flakes
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine chicken breasts with minced garlic and sweet chili sauce. Marinate for at least 30 minutes.
  2. Heat oil in a pan over medium-high heat. Add marinated chicken and cook for 6-7 minutes per side until golden brown and cooked through. Remove from pan.
  3. In the same pan, sauté sliced bell peppers and snow peas until tender-crisp.
  4. Toast coconut flakes in another pan over low heat until golden brown.

  6. Drizzle lime juice over everything and sprinkle with toasted coconut flakes.
