  • 14 oz firm tofu, pressed and cubed
  • 1 cup bell peppers (mixed colors), diced
  • 1/2 cup red onion, sliced
  • 1 cup cooked brown rice
  • 2 tsp taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 avocado, sliced
  • 2 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Press the tofu for about 15 minutes to remove excess moisture.
  3. Cube the pressed tofu and dice the bell peppers and red onion.
  4. In a large bowl, combine tofu and vegetables with taco seasoning until evenly coated.
  5. Spread the mixture onto the baking sheet in an even layer and bake for 25–30 minutes until golden brown.
  6. In serving bowls, layer cooked brown rice as a base then top with the baked tofu mixture, black beans, avocado slices, lime juice, and cilantro.
