Ingredients

  • 3 lbs chuck roast
  • 2 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 1/4 cup fresh cilantro leaves
  • Juice of 2 limes
  • 2 tsp ground cumin
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup low-sodium beef broth
  • Corn tortillas for serving

Instructions

  1. Set the Instant Pot to sauté mode and add a drizzle of oil. Sauté diced onions until golden brown.
  2. Stir in minced garlic, cumin, and chipotle peppers; sauté briefly.
  3. Add the chuck roast and pour beef broth over it.
  4. Close the lid and cook on high pressure for 60 minutes.
  5. Allow natural release; shred beef with forks and mix in cilantro and lime juice.
  6. Assemble tacos with shredded barbacoa, diced onions, cilantro, and lime juice on warm corn tortillas.
