  • 4 oz thin rice noodles
  • 1 cup bell peppers, sliced
  • 1 cup cucumbers, sliced
  • 1 cup carrots, julienned
  • 1 cup grilled chicken, shrimp, or tofu
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • 3 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp honey or maple syrup

Instructions

  1. Soak the rice noodles in hot water for about 10 minutes until tender. Drain and rinse under cold water.
  2. While the noodles soak, chop the bell peppers, cucumbers, and carrots into thin strips.
  3. Grill or sauté your protein choice until fully cooked; season with salt and pepper.
  4. In a bowl, whisk together soy sauce, minced garlic, lime juice, and honey until smooth.
  5. Assemble each bowl with noodles on the bottom followed by veggies and protein. Drizzle with sweet garlic lime sauce.
