Description

Garlic Parmesan Chicken and Potatoes is a savory one-pan dish featuring juicy chicken and crispy potatoes, all infused with rich garlic and parmesan flavors. Perfect for weeknight dinners!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes
  • 6 cloves fresh garlic
  • 1 cup grated parmesan cheese
  • 2 tbsp olive oil
  • 2 tsp dried Italian herbs
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season chicken breasts on both sides with salt and pepper.
  3. In a bowl, mix minced garlic, olive oil, and dried herbs.
  4. Halve larger baby potatoes and coat them with half of the garlic mixture.
  5. Place seasoned chicken and coated potatoes in the baking dish. Drizzle remaining garlic mixture over everything.
  6. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  7. In the last five minutes, sprinkle parmesan cheese on top and return to the oven until melted.
