- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes
- 6 cloves fresh garlic
- 1 cup grated parmesan cheese
- 2 tbsp olive oil
- 2 tsp dried Italian herbs
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken breasts on both sides with salt and pepper.
- In a bowl, mix minced garlic, olive oil, and dried herbs.
- Halve larger baby potatoes and coat them with half of the garlic mixture.
- Place seasoned chicken and coated potatoes in the baking dish. Drizzle remaining garlic mixture over everything.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
- In the last five minutes, sprinkle parmesan cheese on top and return to the oven until melted.
