  • 4 boneless, skinless chicken breasts (about 600g)
  • 3 cloves fresh garlic, minced
  • 2 tbsp Dijon mustard
  • 4 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • Juice of 1 lemon (about 2 tbsp)
  • Salt and pepper to taste
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 100g crumbled feta cheese
  • Fresh parsley or mint (optional)

Instructions

  1. In a bowl, mix olive oil, Dijon mustard, minced garlic, oregano, lemon juice, salt, and pepper to create the marinade.
  2. Add chicken breasts to the marinade and coat thoroughly. Let marinate for at least 30 minutes.
  3. Preheat grill or skillet over medium-high heat. Cook each chicken breast for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  4. Let cooked chicken rest for 5 minutes before slicing.
  5. In each bowl, layer fresh spinach or mixed greens as a base. Top with sliced chicken, cucumber slices, cherry tomatoes, crumbled feta cheese, and fresh herbs if desired.
  6. Drizzle with extra lemon juice or your favorite vinaigrette before serving.
