  • 4 cups chicken broth
  • 1 cup boneless skinless chicken breast (cooked and shredded)
  • ½ cup long-grain rice
  • 3 large eggs
  • ½ cup freshly squeezed lemon juice
  • 2 tbsp fresh dill (chopped)
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the chicken breasts and cook for 15-20 minutes until tender.
  2. Remove the chicken, shred it into bite-sized pieces, and set aside.
  3. Stir in the rice into the broth and cook for another 15 minutes until tender.
  4. In a bowl, whisk together the eggs and lemon juice until frothy.
  5. Slowly pour the egg-lemon mixture into the pot while stirring continuously to avoid scrambling the eggs.
  6. Return shredded chicken to the pot, season with dill, salt, and pepper to taste.
